Healthy Exchanges Food Newsletter April 1992, pg. 3 or Best of Healthy Exchanges Food Newsletter Cookbooklet pg. 140. I had this for the first time about 15 years ago, at my aunt's home. She said it was for diabetics, but didn't tell me where she got it. I just knew this was it when I seen it again! It is very good! My aunt always served it to guest in the summer. I took it to the summer block party and came back with a empty dish. All 5 stars.

Healthy Exchanges Food Newsletter April 1993, pg. 5 or Diabetic's Healthy Exchange Cookbook pg. 119. I thought this was excellent. I really loved the huge portions, it was filling and yummy. This is more like a "new potato" salad though, I highly suggest using red, or new potatoes, rather then a russet or starchier potato for it. All 5 stars.

Chicken Pot Soup-

Healthy Exchanges Food Newsletter April 1995, pg. 5 or Heart Smart Healthy Exchanges Cookbook pg. 63. Chicken Pot Soup was the easiest recipe yet! Vince and I both thought it needed a little salt though. So we added a very little sea salt and thought it was just perfect. Also I used frozen peas instead of canned to give it a more authentic pot pie texture. Vince said it tasted just like chicken pot pie. I served it with crescent rolls to simulate the flavor of having a "crust" with it. They went with the soup fantastically well. 5 stars!

After Dinner Mint Cheesecake Squares-

Healthy Exchanges Newsletter April 1998, pg.8. These get one star. They were very simple to make. And pretty. Very low in calories as well. However, they were just to minty for my taste. Maybe with less mint extract, I would like them better. And made with peppermint extract instead of mint. I will try them again with less extract, and using peppermint instead of mint.

Healthy Exchanges Food Newsletter, April 2001, pg. 6. This to me was too thick, and really not very much flavor. I won't be making it again. However, when I added honey mustard, and 1 ounce of ham, it was good. It will receive 1 star.

Just Plain Good Cherry Cobbler-

Healthy Exchanges Newsletter April 2002, pg. 8. This gets 5 stars. I liked it very much. However, if you are wanting a cobbler with a crispy, flaky piecrust like topping, this is not it. It was more like pound cake with cherry sauce. I used pecans instead of walnuts, and it was very good. It had a nice rich-buttery flavor.
